BLT Pasta Salad
During the summer growing up, when we had a surplus of tomatoes . . . we would have BLT sandwiches for dinner. These were one of my favorite meal nights. The texture combination of hard and soft and anything bacon was always a hit.
This pasta salad truly . . . truly tastes like a BLT sandwich! The secret is a touch of mayo to bring all the individual flavors together. A handful of ingredients and you have a great side option for grill nights or to share at a cookout.
I chose shell shaped pasta, but any will work. I’d go with a medium sized shape just for balance with the chunky ingredients. This is a forgiving recipe . . . feel free to add in items such as avocado or more cucumber. I tried it with some crisp Romaine, but found it didn’t hold up well enough for my liking.
I also prefer mine dry, meaning a minimal amount of dressing. I realize this is a personal preference, so feel free to increase the dressing ratios to your taste.
