Creamy Peach Popsicles
Stop everything . . . Georgia peaches have arrived in Pennsylvania! Seriously though, aren’t Georgia peaches the best?!! I recently visited family who have relocated to Georgia. Alas we were there before Georgia peach season, but their pride in the fruit is evident - street names, town names (we visited Peachtree City!) and store names.
I spent the weekend crafting a variety of peach recipes. My favorite though is these Creamy Peach Popsicles. They are subtly sweet, tart and oh so very, very creamy. The secret is Greek yogurt and a super simple Peach Simple Syrup. Say that fast five times . . .

I found it on Amazon and love that it has the traditional popsicle shape and is dishwasher safe. It even comes with popsicle sticks.
I started by dicing up two peaches for the syrup. To make a simple syrup, combine equal parts sugar and water, bring to a boil and simmer for 10 minutes. Whatever you add to it, like peaches, will create the flavor. For this recipe, I only used 1/2 cup of sugar.
I let the syrup cool for about 15 minutes, then mixed together the yogurt, peach syrup and 3 tablespoons of full fat, unsweetened coconut milk. It is thick, like pudding. And that is it! Fill the mold cavities and pop into the freezer.
It takes about three hours for hard set popsicles. I set the mold into a baking dish of hot water, just to help them release. The kids will line up for this healthy, summer treat.
