Sweet Potato Coconut Milk Soup
For some reason . . . I've always thought of sweet potatoes as a fall food. Probably because that is when they are harvested, but they are a great "anytime of the year" food! They are rich in vitamins, low calorie and very low cost. A colleague and I were out to lunch a couple weeks ago and had a similar soup. It was so yummy and surprisingly light. I told her that I would figure out how to re-create it.
